I am a bit confused, how much of the original plane is being retained? Those wings and even the cockpit look completely new. Is this because it is being rebuilt to flying condition? (Sorry if this has been answered before)

(Sorry if this has been answered before) 99% of the inside structure is retained, but most of the external skins are new.

I thought some or most of the exterior skins were to be retained too? Which I thought was part of the plan in the restoration.

I think those skins that are still flyable are retained while other skins that are not up to standard are replaced - I think that was the plan.

My money on Mandy!!
When so many other restored airframes exist with examples of personalised signatures of factory craftsmen and women, why would there be a day of the week, indistinguishable from any other on this airframe?
Mandy's Mustang for me!

Looking at the writing style its an "O" not an "a" so Monday. the "y" has partly disappeared when the cutout was made. Could have been instruction for when this part was to be sent/rivetted/installed/etc? Thats my pick anyway.

It would be interesting to go through the North American Aviation Dallas factory staff lists for the weeks during which the Mustang was manufactured in 1945, and see if there is a Mandy (or an Amanda or Miranda, which Mandy is often short for), and if there is, get a surname and find out if she is still alive.

Oh and Mandy is also used as a nickname for the male names Armand, Armando, Mandel or Emmanuel.
