I know I used to know this in my RNZAf days, but have clean forgotten after all these years.
What is the difference in the titles "Commanding Officer" (or CO), and "Officer Commanding" (OC)?
Is it the size of the unit they command that denotes the way it's written?

Quite a significant difference actually Dave, and self-explanatory when you think about it. A CO is a Commanding Officer, with all that that implies, but he may have within his responsibility, a Base for example, but on which there are many lodger units which for chain of command purpose have an Officer Commanding. For example, the officer in charge of a particular activity, like engineering at Whenuapai, is an OC, but reporting ultimately to the CO!

Ah right. I thought that was how it went but just couldn't remember. So OC's would generally be junior in rank to CO's I guess.
So, eg OC Avionics Squadron, under CO Technical Wing, etc.
