There are at least four full size fibreglass replicas - Harewood, Hamilton, Tauranga and Westgate.
As for real Spitfires, there is the Mk XVIe with the Subritzky family at North Shore; the Mk XVIe in the AWM; The Mk XVIe at Wigram; The Mk XIV, Mk XVI and Mk Vc at Avspecs, Ardmore; and Brendon Deere's Mk IX at Fielding.
There is also at least one Jurca Spitfire full sized replica under construction and I've heard of another full sized exact replica under construction to fly. Plus several Mk 26 non-replicas.

And, if tentative plans currently being dreamed about *do* come to fruition, at least one more Jurca MJ-100 at Omaka.
Fingers crossed!
The other full-scale aircraft is likely Bruce West's Spitfire Aircraft Company wood structure a/c in North Shore.
